Sydney Commercial Kitchen is committed to helping cafe, restaurants use the best equipment so you can make more delicious food faster. So it staggers me when I go a cafe or restaurant they have the right equipment to get the job, but they're sabotaging their business. It does not matter if you have all the fancy equipment if your service sucks. Today I had a meeting with a client at a Cafe on the North side of town. They were not super busy. My client arrived first & already had a coffee. So we head to the big table at the back of the cafe. He orders me a coffee it eventually turns up. So after much discussion he decides it time to get another coffee and something to eat. So my client disappears to order. I'm thinking that shouldn't take so long to order. By the time he got back, I'd read the newspaper. He comes back saying "Can you believe she made me wait while she talked on her phone,"" I say "No problem,"" I think this cafe has a new business model. Where they charge you for your time, you spend there. It took them another 17 minutes to bring our cakes out. I want you to picture this The girl talking on her phone while juggling, a plate with 2 slices cake & one fork. We ask "Do you think we could get another plate & an extra fork,"" All we got was a grunt. The minute hand keeps spinning as another minute ticks by. Then another & another & another. Finally, she drops a plate at our table, it least it didn't disturb her phone call. She was still on that damn phone. So my clients picks up a piece of cake with his fingers because we still only have one piece of cutlery. He now has sticky fingers covered with icing, so he just eats his cakes. So he asks me "what are you waiting for, they taste good,"" I look up: "Just waiting for my coffee" I'm thinking coffee & cake a good combo. We try to get the girl's attention to prompt her on our missing coffees. She just holds up a hand, & looks at me implying "Can’t you see I'm on the phone. Just hang on,"" Our meeting closing in on 90 minutes, we still waiting for our second Coffee. Here’s the thing I don't care how fancy your place is or how busy you think you are. I don't think it’s too much to expect you to take our orders and deliver it. If you remember, I told you this place was not busy. Here's a clue. Your service sucks, We won't be coming back. I hope your phone call was worth it. I just happen to visit a lot of cafes, most of you are doing a brillant job, and I just want to keep coming back. Some of you guys need to lift your game.

Why would let any guest walk through your kitchen?

Last weekend I went for a walk with a friend, we decided to stop for lunch. It was a hot day. I had been keeping my fluids up. So I asked if they had a toilet. The guy points and tells me "just walk through the kitchen you'll find the bathroom on the right,"" Why would let any guest walk through your kitchen? What happened if slipped over? The cafe had a lovely ambience. But now my trip through the kitchen distracted me. I took a peek at their kitchen, I was glad they had a clean, tidy kitchen I would have been much happier to walk out around cafe to get to the toilet. How do we say this delicately? Oh not sure so here goes. Not everybody has good hygiene. So why would let people in your kitchen may not have washed their hands. Yuk. I sure there's a raft of laws designed to stop this happening. Just don’t do it.

Just to complete the trifecta of woes

A friend shared with his experience of going to a restaurant on Saturday. They had a large party. He described the service as just shoddy. He said it felt like they were just abandoned. It was like the waiter assumed he wouldn't get a good tip so why bother. He just showed the table disdain. Get this. Someone on the table asked,"SCan we get a Whiskey?"S The waiter responded,"Sorry we don't have any Whiskey,"" A couple of minutes later he's pouring a whiskey at another table. I'm sure it took a lot effort, to suddenly find the Whiskey. So if the only reason you're going to make an effort, in serving is to get a tip. I have spent time in the US, so I get the concept of the tip is designed as a supplement to the low wages. A tip is designed d as gratitude for giving extraordinary service. Not for just doing your turning up. If you only just do your job. That's nothing special that's what’s your paid to do. All these don't mean that these are a bad restaurant or cafes. But having people who are lazy or don't care is hurting your business. There's no shortage of good cafes & restaurants. So if you're not prepared to step up to the plate and give red hot service, then you lose. It's a competitive market out there, so think you get by with not caring about how you serve your customer, then your business is going to struggle. Christmas is nearly upon us. Let's make it good one I can't think of anything more exciting than telling people of the awesome experience I had your restaurant or cafe.
