What's your inspiration for owning a restaurant? What inspires your food? Michael Stern //flic.kr/p/q7hHAk Do you like or love cooking? If you wake every day thinking “I have to go to work to cook”. It's going to be hard. So let's look at “I Have To” this a duty. It's a drudgery. So if instead of saying “I have to” we change this to “I Get To“ then you just changed your motives. Why does changing one word make such big difference in your cooking?
You see “I Get To” whatever you're doing is now a privilege.
It's no longer a chore to cook it's your privilege to cook for your guests. Let's see how these compare. If you're going to McDonald's you're not expecting a gourmet banquet. It would be fair to say that most of the people turning up to work at McDonald's because they have to. It's consistent food but it's not a meal you will cherish or even remember. “Just because you eat doesn't mean you eat smart. It's hard to beat a $1.99 wing pack of three at a fast - food restaurant - it's so cheap - but that wing pack isn't feeding anyone, it's just pushing hunger back an hour.” Mario Batali Now you sitting at the Fat Duck. Heston and his team treat eating their food as a privilege to serve you an incredible experience. This should apply to everything you do. Let me share how changing these 2 words will make a difference.
Remember when we were at school?
Navy Hale Keiki School //flic.kr/p/daN38R If we compare those who have to go to school with those get to go school. If you have to go school for a large part, you're just making up the numbers. We often wonder when we see students from overseas grab this opportunity. They understand Education is a privilge They get to learn rather than have to do it. Can you see the difference? How do you think your recipes would change? If you decided that you get to cook wonderful food for your customers. What do you want your dining experience to look & feel like? So let's assume if on a scale 1 to 5 for you delivering your dining experience. At 1 is eating at McDonald's & 5 is Dining at the Fat Duck.
Where do you feel you sit on this dining experience scale?
Do you have to Cook? Or do you get to Cook? Two little words can inspire your cooking. It's lot easier to be passionate cooking delicious meals when you get to cook rather than you have to cook. Sure we all have to eat. Sometimes you will eat McDonald's occasionally you will be treated to an inspired meal. “It all comes back to the basics. Serve customers the best-tasting food at a good value in a clean, comfortable restaurant, and they'll keep coming back” Dave Thomas I have to eat, but you get to serve me memorable food.
