Wow! What a busy week it's been. We had the UNOX Combi Oven Cooking Demonstration on Tuesday at Sydney Commercial Kitchens.

I think everybody learnt heaps & could see how using a Combi Oven, Vacuum Sealer & Blast Chiller will change how you cook. Thanks to all those who managed to come and watch this 2 hour Cooking Demonstration. Sean, the Chef from UNOX, did an amazing job, with more than a capable backup from SCK's resident chef Brett. Irinox Blast Chiler Want to see what Blast Chilled Strawberries, Oysters & Tiger Prawns look like. Hang around & I'll get to it. Watching them load up the Blast Chiller created lots of discusion. It was like an extensive Blast Chiller workshop.
Here's a little of bit of the 2 way discussion on Blast Chilling
With a Blast Chiller, it's possible to lower the temperature of foods you have just cooked. You can reduce the temperature of cooked food from +70 °C to +5 °C or below within 90 minutes... Rendering your food safe for storage and later consumption... Bacteria growth multiplies fastest at the ‘danger zone’ between +70 °C to +5 °C... When food stays in the “Danger Zone” it becomes unsafe for future consumption... Your Blast Chiller will preserve the quality, colour, fragrance, flavour and appearance of your food. And extending its shelf life... When you freeze food, all the water molecules turn into crystals. If you place your food in commercial freezers, the freezing starts from a warm temperature... Then the ice crystals which form will be large. Macro-Crystals... So when the large water crystals melts, it causes your frozen food, cell molecules to rupture... Now the texture and taste of your food will deteriorate. As the food thaws, liquid seeps out of the collapsed ruptured cells... A Blast Freezer promotes rapid freezing the faster the freezing the smaller the crystals... Your Blast chiller lowers the temperature at a rapid rate, so you get micro-crystallization. So you keep all the qualities of your food whole. Because your Blast Chiller freezes the water molecules in your food to a micro-crystallization state the food molecules are not destroyed... The Blast Chiller’s rapid cooling reduces loss from evaporation during the cooling process. So the size of the ice crystals in your food is tiny... This was just a snipet of Blast Chiller discussion. How long would it take you to cook 42 Chicken Schnitzels in a Deep Fryer?
How easy is it to Cook Chicken Schnitzels on a Combi Oven... Taking Sizzling golden bown Chicken Schnitzel out of the UNOX Combi Oven... Check out these juicy Chicken Schitzels cooked in the UNOX Cheftop Combi Oven... So how long would it take you to cook 42 Chicken Schnitzels in a deep fryer? The consensus around the room was, it's going to take about 40-45 minutes to cook 42 Chicken Schnitzels in a deep fryer. Does that sound fair enough? You would also need to have somebody to watch & monitor the Chicken Schnitzels so they did not burn. You would also need to clean the deep fryer. 42 Chicken Schnitzels cooked in the UNOX Cheptop Combi Oven took 8½ minutes. While these were cooking the chef was preparing the salad fo teh salmon. So you can see you have already save 30 minutes, + Cleaning the fryer. You also need someone stationed at the deep fryer.
