(Number of portions: 6) 1 * 1.8 to 2.2kg Chicken (whole)
Lemon and Pepper Marinade Ingredients
2 tbsp Kosher Salt 2 medium lemons, juiced 1/2 tbsp Olive Oil 1/2 tsp Dried Thyme 1 tbsp Black Pepper 450g Eschallots 1/2 to 3/4 cup of your Chicken Stock (Reduced Sodium) 1/3 cup Dry White Wine
Roasted Lemon and Pepper Chicken Method
Clean the Chickens Dice Eschallots In a bowl, Mix in all the marinating ingredients. Taste and season if necessary Place your chicken into a Vacuum Seal bag Pour your Marinade into bag Massage the Marinade around the Chicken. Make sure the chicken is covered with marinating liquid. Seal Chichen & Marinade in the bag with your Vacuum Sealer Marinate the chicken overnight in your fridge In the morning go to your Rational Combi Oven. Go to poultry and press 'roast' Push the chickens onto the Chicken and Duck Superspike and roast until cooked Serve with Potatoes or other Vegetables
