Ok, I'll admit I don’t mind catching up with friends for a meal at the Pub. Gone are these days when Pub food meant Steak n Chips or strange version Chinese Sweet and Sour Pork. Pub food has grown up it. It's now Sophisticated. Let's face it. You don't need to reason to go out for a feed. Today we picked a pub which central. Which means it was not close to anybody because we live all around Sydney its not always possible to catch up.
So it wasn’t what you'd call our local.
It was not my first time I'd had lunch at this pub. But I seemed to have the hazy recollection that the food seemed to take forever. As with people travelling across Sydney, there always a traffic jam. So as we started to arrive, we would go and order our food and get handed a Food Ready Buzzer. So all our meals were ordered in in 15 minute period. This Pub has a good menu. So to give you an idea of what was on offer & what we ordered. How does this sound? Slow cooked Roast Lamb & Vegetables... Pulled Pork Burger with chips... A New York Sirloin Steak with Pepper Sauce... Fried Sole or Battered Flathead Fish with Chips... Handmade Lasagna...

When you see the menu, these look like the should not take too long to get ready. I know cooking steak & fish takes a bit of time. So we're sitting around the table with drink hand, chatting away, waiting for the buzzer. So the first Buzzer goes off after 45 minutes. The Steak is ready. Over the next 23 minutes, the rest of the meals arrived. Yes, we started to time this meal service. One of the guys wanted to go out the back to see if they were trying to catch the Lambs or maybe there was pond out the back because it should never have taken an hour for our meals. Just to be clear, it's about 1:30 pm and the pub was not even full. We had a table of 10, and we all ordered at separate times. So as I sat there waiting I was trying to work out why this was taking sooo long. Most Restaurants or Cafes serving these meals, could of knock these out comfortably in 20 minutes. If we review our menu choices. All of them except for the Steak & Fish Should have already been pre-cooked. You don't cook a roast or pulled pork from order. I noticed every meal came with chips. So would takes a couple of minutes each chip basket. I picked Slow Roasted Lamb because I figure this should be relatively fast. I know the name implies it's slow roasted, but it should not take 54 minutes to plate this. You would imagine the Roast Lamb, the Pulled Pork & Lasagna were not cooked on the spot. So why does it take an over hour to get our meals? Sure there's a push to reduce Fast Food. Slowly cooked food just packs so much more flavour. But I think they missed point we don’t want Slow Food Service. I am not going to name or tell you the Location of this slow pub, just in case, they were having a bad day in the kitchen. It happens. I guess they could have been short on Staff or just disorganised. It’s hard to tell why the meals took so long. Or maybe they think the longer the wait, the more we’ll drink. Let me tell you, we didn’t go back to order more drinks, but we did complain about the slow food service. I think we can assume that this Pub is not the only place which doesn't seem to have it acts together. If you do a Google search, you'll find heaps of places showing up for Slow food service. These are the same Restaurants & Cafes complaining because they're getting so many negative reviews.

So how should this Pub & other Restaurants fix their slow food services?
First, they have to want to fix this problem. It would be easy to say they should get more people in the kitchen to cook the food. For most kitchens, this is not practical because they don’t have space. Even if they have extra space to adding more people to their kitchen, adds more wages with limited efficiency benefits if they still don’t have their act together. A good place to start is getting new restaurant equipment. So when you’re looking at replacing your food equipment in your kitchen. You should ask these Questions. Will it grow your Revenue?... Will it increase your Profits?... Will it improve your productivity/efficiently?... Will it make your food taste better?... I would say that’s a gimme, it's going to make your food taste better. Or why get it in the first place. If I'm looking for a piece of equipment which ticks all these boxes, I would choice the Combi Oven. If we take a look at the menu again, you soon realise most of this food could be cooked in a Combi Oven hours before or even days. Once it’s cooked, it could Put in a Blast Chiller. If this Pub had a Combi Oven, They could have cooked the Pulled Pork & roasted lamb & roasted vegetables overnight then kept at the holding temperature. So they had to was put the chips in the deep fryer & serve the meal much quicker. See why the Combi Oven will help you crank out more tastier Faster than you thought possible. Any rational restaurant owner going to eat this up...and use this make a lot of money. You will immediately start seeing results. So you can see what you can achieve with a Combi Oven with your food.
