Widely touted as one of the biggest health trends that will hit this year, we thought it was time to take a look at poké to find out what it is, how to make it and what we should love about it. 9Kitchen caught up with chef Jason Roberts, of Poku by Flying Fish in Sydney, to find out what it is that makes this 'it' dish so popular. "Poké is fundamentally a Hawaiian chopped-salad, using the freshest of fish, cubed and blended with a myriad of flavours and textures," Roberts tells 9Kitchen, noting that there is also a close resemblance to a sashimi or sushi bowl.
