Well perhaps not, but cooking with an induction appliance is certainly faster than using either a comparable gas or electric cooking appliance. Induction cooking uses electro magnetic induction to heat pots and pans.

Benefits of Induction Cooking in Commercial Kitchens

Induction is technology that offers all of the benefits of cooking with gas, but none of the drawbacks. In commercial kitchens, gas has always outperformed electric cooking surfaces and because of this has always played a huge role in the kitchen. Professional chefs would have never believed an electric induction cooktop could be superior to gas ... but now it's a fact, and seeing is believing! Faster. As induction directly heats the pot or pan, very rapid increases in temperature can be achieved and it can accomplish this task significantly faster than other methods of cooking. In the foodservice industry time is money, and a faster cooking surface results in shorter preparation time. And potentially ... increased profits! Safer. Electric induction cooktops are much safer than gas or other electric surfaces, since there is no open flame, red-hot coil or other radiant heat source to ignite fumes or flammable materials. Cleaner. Cleaning up is a breeze, just use a damp cloth and wipe over the flat, easy-to-clean surface. Cooktops are also usually easy to clean, because the cooktop itself does not get very hot. Cooler. Much of the heat generated by traditional gas or electric ranges ends up as waste. Typically this waste heats the kitchen instead of the food and contributes massively to structural cooling costs as well as an unpleasant work environment. With an electric induction range, almost no ambient heat is produced, since all the heat is being generated in the pan itself. Energy Efficient. It can be quickly turned off and on again, allows for more precise control of temperatures, especially for delicate pan work and has some safety advantages compared to gas stoves and traditional electric cooking. Cheaper. When using an induction cooktop, almost 95% of every dollar you spend on energy goes right where you want it - into the pan! Gas delivers only 35% to the pan and traditional electric about 56%. In addition, when you remove the pan from the induction cooking surface, the induction cooktop immediately goes into standby mode, which uses almost no energy whatsoever.
