Calamari, tossed in desiccated coconut and deep fried. With space in modern commercial kitchens at a premium, finding ways to increase your menu offering without having to use expensive additional equipment is always a challenge. Back in the day at my restaurant in Crows Nest we solved this in part by using a Roband Benchtop Deep Fryer. The unit itself took up very little bench space, which is always critical and allowed us to offer a range of tasty and easy to prepare entrees. From calamari, crumbed in desiccated coconut and served with a spicy plum sauce, to prawns in a tempura batter and accompanied with a garlic aioli, they added variety to our menu.
